Case Study Two: Dry Mix Strawberry Instant Beverage
Challenge: Develop a fruitier taste and increased sweetness without raising level of existing sweetener in dry mix strawberry instant beverage.
Solution: Add 50 ppm ethyl maltol to dry mix, resulting in 3.5 ppm as consumed.
Result: When prepared with skim milk, beverage exhibited enhanced strawberry flavor, enhanced creaminess and increased sweetness.
Case Study Three: Lemon Lime Isotonic Drink
Challenge: A lemon lime isotonic drink has bite from the citric acid, burn associated with the use of preservative sodium benzoate, and metallic taste/bitterness from the mineral salts.
Solution: Add 3 ppm ethyl maltol.
Result: Chemical bite and burn suppressed. Metallic taste/bitterness reduced, and overall flavor profile rounded.

Challenge: Coffee product has bitter notes, making it less palatable to customer.
Solution: Add 75 ppm maltol.
Result: Minimization of harsh flavor notes, acidic character, and bitter aftertaste associated with caffeine and other components.
